ABSTRACT
This research aimed to get the combination of drying temperature and dextrin concentration against the quality of o f t emulawak’s essence, and the combination
between citric acid and Na- Bicarbonate Bicarbonate treatment against
temulawak’s effervescent powder po wder quality. The result of the first step shows that the treatment combination between 20% of dextrin concentration co ncentration and 50°C of o f drying temperature which is the t he best treatment of the first step from temulawak’s powder essence that has characteristics on 10.11% of water content, ( L*) 55.10 of brightness level, (a*) 14.56 of redness level, ( b*) 44.20
of yellowness level, 24.63% of
rendement, 5.63 of pH; 2.78 of water re-absorption; 1.88% of sugar content reduction; 62.27% antioxidant content, 5.55 obt ains panellists’ assessment against color, 5.95 of t aste, and 4.15 of aroma. The result of the second step shows that the treatment combination between 10% citric acid and 20% Na-bicarbonate that is the best treatment of the second step that has characteristics on o n 7.48% of wat er content, (L*) 59.37 of brightness level, (a*) 14.53 of redness level, (b*) 46.50 of yellowness level, 5.33 of pH, 88.17 of dissolving rate, 2.49% of sugar content reduction, and 46.53% of antioxidant content. The conclusion of this research is the best treatment combination on the first step is 20% of dextrin concentration and 50°C drying temperature, while at the second step is is 10% citric acid concentration and 20% Na-bicarbonate. II.1.3 Jenis-jenis Serbuk
Serbuk secara umum dibagi menjadi 2 bagian yaitu: 1. Serbuk tak terbagi (pulvis) Serbuk tak terbagi adalah serbuk yang baik untuk pemakaian dalam dan pemakaian luar yang penggunaannya tidak sesuai dosis (Dirjen POM, 1979: 23). 2. Serbuk bagi (pulveres) Serbuk bagi adalah serbuk yang dibagi dalam bobot yang lebih kurang sama, dibungus menggunakan bahan pengemas yang cocock untuk sekali minum (Dirjen POM, 1979: 23). Contoh dari serbuk bagi yaitu serbuk effervescent. Asam Asam sitrat Asam sitrat tersedia dalam bentuk monohidrat dan anhidrat dengan bermacam ukuran partikel, tidak berwarna, berupa kristal bening, putih berbentuk serbuk granul sampai kristalin. Tidak berbau dengan rasa asam yang kuat, sangat larut dalam air, mudah larut dalam etanol (Tungadi, 2014: 8).
Asam tartrat Asam tartrat larut dalam kurang dari 1 bagian air dan 2,5 bagian alkohol. Asam tartrat menunjukkan perilaku yang sama dengan asam sitrat anhidrat. Perbandingan pembentukkan karbondiokasida dari tablet effervescent dari asam sitrat anhidrat, asam askorbat dan natrium bikarbonat dalam perbandingan yang sesuai dengan stoikiometri mengindikasikan bahwa asam askorbat dan asam sitrat anhidrat menunjukkan perilaku yang sama sedangkan asam tartrat membentuk

Natrium bikarbonat Tidak berbau, serbuk kristalin putih dengan rasa garam, rasa sedikit alkalin, tersedia dalam berbagai ukuran partikel serbuk dan granul. Pada pemanasan dengan suhu 250 OC-300OC, Na-bikarbonat terurai dan dikonversi menjadi natrium karbonat anhidrat. Proses ini sangat bergantung pada suhu dan waktu, dimulai pada 50 OC. konversi 90% sempurna terjadi dalam waktu 75 menit pada 93 OC. Natrium bikarbonat terurai bila dipanaskan pada suhu diatas 65OC. Salah satu komponen penyusun serbuk effervescent adalah asam sitrat monohidrat (Rame, ( Rame, 2004: 181).

Dimana asam sitrat saja akan menghasilkan campuran lekat dan sukar menjadi molekul air Kristal pada setiap molekul asam sitrat, keistimewaannya yang diambil sebagai kelebihan dan digunakan dalam pengolahan granul dengan metode peleburan (Ansel, 2008: 214).

Merupakan asam yang paling sering digunakan karena harga yang murah, sangat larut dan dalam bentuk granul yang dapat mengalir dengan bebas (Lachman, 2008: 287).

Natrium bikarbonat - Natrium bikarbonat umumnya digunakan dalam formulasi sebagai sumber karbondioksida tablet dan serbuk effervescent (Rame,2004: 629). - Natrium bikarbonat cepat bereaksi dengan air karena memiliki sifat kelarutan yang mudah larut dalam II bagian air (Dirjen POM, 1979: 414). - Natrium bikarbonat dapat menetralisisr asam sitrat dan asam tartrat tartr at untuk dapat membebaskan CO 2 sehingga terbentuk buih (Ansel, 2008: 214). -
Konsentrasi natrium bikarbonat 25%-50%. Dalam formula ini digunakan natrium bikarbonat 41%. Konsentrasi ini diperoleh dari hasil konsentrasi asam sitrat, asam tartrat dan natrium bikarbonat (1:2:3,4) (Parrot, 1978: 65).
