Los equipos frigoríficos enfrían el aire, pero de nada serviría si no pudiéramos retenerlo para conservar nuestros alimentos; por eso los equipos frigoríficos deben completarse con un recinto adecuado en el que almacenar el frío. Cabe pensar que cualquier recinto puede cumplir esa función, pero un local en el que entre aire por debajo de la puerta o cuyas paredes sean caldeadas por el sol del mediodía, no parecen ser los lugares más indicados para alcanzar el fin propuesto. Las cámaras frigoríficas son recintos pensados para mantener una atmósfera fría bajo la cual conservar los alimentos u otro tipo de género durante largo tiempo. Para alcanzar ese objetivo debe reunir ciertos requisitos tanto en los materiales que la constituyen como en sus formas constructivas, y ese es precisamente el motivo de esta unidad didáctica.
Contenidos generales A lo largo de esta unidad didáctica estudiarás las características constructivas de las cámaras frigoríficas y de los materiales aislantes que se emplean en su construcción. Estudiarás también los distintos tipos de puertas y herrajes (bisagras, manillas, etc.). Efectuarás también cálculos sencillos conducentes a determinar la entrada de calor a través de las paredes de la cámara, los cuales te servirán en próximas unidades didácticas para determinar la potencia de la instalación.

Aislamiento térmico Posiblemente habrás observado que las neveras se ponen en marcha periódicamente; lo hacen porque aumenta la temperatura en su interior y el termostato da la orden para que se ponga en marcha el compresor. El aumento de temperatura puede deberse a que se ha abierto su puerta y ha entrado aire caliente, o quizá se deba a que se han introducido alimentos calientes... Sin embargo puedes comprobar que su funcionamiento intermitente intermitent e tiene lugar también durante la noche, sin que nada de lo dicho anteriormente haya sucedido. ¿Cuál es la razón de que se caliente el interior de la nevera estando perfectamente cerrada?
El proceso de enfriamiento de los alimentos se inicia en el mismo momento en que el compresor del equipo frigorífico se pone en marcha, comenzando a absorber refrigerante del evaporador y originando su enfriamiento. El aire, al contacto con el evaporador se enfría y se hace más denso, descendiendo a la parte más baja de la cámara y dejando un espacio que es ocupado por el aire caliente que está algo más abajo. El aire frío que desciende se pone en contacto con el género almacenado y absorbe parte del calor que contiene; su temperatura aumenta y se

El ciclo de enfriamiento y calentamiento en el interior de la cámara se repite una y otra vez, pero en cada repetición el aire y el género estarán cada vez más fríos, pues el calor que contienen es absorbido por el evaporador. Cuando el aire haya adquirido la temperatura deseada, el termostato ordenará al compresor que se detenga, y el aire ya no continuará enfriándose.

La experiencia nos dice que esta situación no durará así mucho tiempo, debido a que el calor exterior atraviesa las paredes de la cámara y calienta poco a poco el aire interior (figura 2). Al fenómeno por el cual el calor se transfiere de un extremo a otro de un sólido se le denomina conducción, y se cree que es debido al movimiento de los electrones libres en el seno del material. Puedes percibir el fenómeno de la conducción si calientas uno de los extremos de una barra metálica, pues al poco tiempo el calor llegará al otro extremo.

o Paneles de corcho (ICB) El corcho se obtiene de la corteza del alcornoque. Es una masa elástica y homogénea de células muertas aplanadas e impregnadas de una sustancia grasa que la hace casi impermeable. Como elemento aislante se comercializa en placas de 1.000 x 500 mm, con espesores de 20 a 160 mm. Es un filamento obtenido al hacer fluir vidrio (arena de sílice), previamente fundido, a través de un plato con agujeros muy finos que gira a gran velocidad. Una vez obtenida la fibra, ésta se impregna de aceite mineral o de resina de poliéster, dando lugar a la lana de vidrio y a la fibra de vidrio rígida respectivamente.

o Poliestireno expandido (EPS) Para fabricar el poliestireno expandido se utiliza como materia prima el poliestireno expansible, el cual se obtiene a su vez de la polimerización del estireno en presencia de un agente causante de la expansión (pentano). El poliestireno expansible, en forma de granos, se somete a una expansión calentándolo con Fig. 5: Poliestireno expandido. vapor de agua a temperaturas en torno a los 100º C, haciendo que su volumen aumente 50 veces; su peso específico pasa de los 630 kg/m 3 a valores entre 10 y 30 kg/m3. Tras una fase de reposo y estabilización, los granos de poliestireno se introducen en moldes y se someten a un nuevo calentamiento mediante vapor de agua, expandiéndose y empaquetándose unos contra otros quedando unidos en la forma deseada. El poliestireno expandido es también conocido como porexpán o corcho blanco, y se comercializa en planchas de 2.000 x 1.000 mm con espesores que oscilan entre los 10 y los 100 mm. Otras de sus aplicaciones son el aislamiento acústico y el embalaje de alimentos y electrodomésticos.

Los componentes de la espuma de poliuretano son petróleo y azúcar, que tras un proceso químico de transformación dan origen a dos productos básicos denominados genéricamente poliol e isocianato. La mezcla en condiciones adecuadas de estos dos componentes proporciona una espuma de rigidez variable, según la proporción de cada uno de los dos productos que se haya utilizado.
