KATA PENGANTAR
Mutu produk buah merupakan bagian integral dari subsistem produksi buah-buahan yang tidak dapat dipisahkan. Produk buah akan mempunyai daya saing apabila dibarengi dengan adanya standar mutu dan jaminan mutu terhadap konsumen. Dalam perdagangan dunia, standar dan jaminan mutu buah merupakan persyaratan pokok yang harus dipenuhi. Buku Standar Prosedur Operasional (SPO) Pisang Barangan Kabupaten Deli Serdang ini memuat keterangan alur proses budidaya sampai penanganan pasca panen buah pisang segar yang disusun dengan mengupayakan mengadopsi konsep dasar HACCP ( Hazard Analysis Critical Control Point) yang disederhanakan. PENDAHULUAN
Buah pisang segar merupakan salah satu komoditas perdagangan internasional. Jejaring perdagangan global pisang telah berkembang baik, sehingga sepanjang tahun dapat mensuplai kebutuhan pasar khususnya di negaranegara sub-tropika.
Diantara jenis pisang yang banyak ditanam di Indonesia, pisang varietas Barangan memiliki keunggulan dari mutu (rasa, tekstur, aroma), dan daya simpan. Daerah sentra produksi pisang barangan adalah provinsi Sumatera Utara, tersebar di Kabupaten Deli Serdang, Langkat, Simalungun, Tapanuli Selatan dan Asahan. STANDAR MUTU PISANG BARANGAN
Usaha agibisnis pisang telah menjadi salah satu usaha agibisnis andalan dari beberapa negara di Amerika Selatan misalnya Honduras, Costa Rica, dan Guatemala. Produknya diekspor ke berbagai negara sub-tropik seperti Uni Eropa, Amerika Serikat dan Jepang. Perusahaan agibisnis pisang global yang terkenal misalnya Chiquita International. Dalam perdagangan global, pisang unggulan saat ini adalah “Cavendish”, salah satu kelompok AAA. Indonesia sebagai salah satu negara tropika di kawasan Asia Tenggara, memiliki keragaman Sumber Daya Alam (SDA) hayati berbagai varietas pisang seperti Barangan, Ambon Kuning, Raja Bulu, dan lain-lain; SDA agroekologi “humid-tropic”; serta Sumber Daya Manusia (SDM) petani dan swasta yang cukup besar. Hal ini menggambarkan peluang yang besar untuk pengembangan dan peningkatan produksi pisang dengan pola-pola pengembangan yang terintegasi secara lintas sektoral.
