Unidad I:Prepar I:Preparación ación y decor decoración ación de locales destinados al servicio de alimentos y bebidas Generalidades Sobre El Servicio De Restaurante Restaurante Y Bar Los servicios de restauración se ofrecen en multitud de locales diferentes. Se distinguen por su oferta (boquitas o tapas, comida tradicional, internacional, italiana,...), por el tipo de servicio (buffet, menú, carta, eventos,...) o por su categoría (uno, dos y hasta cinco tenedores). De acuerdo con el Reglamento de alimentos, bebidas y diversiones emitido por el Consejo Directivo del INTUR- Instituto Nicaragüense de Turismo, en su Capítulo II que habla sobre los tipos de establecimientos, menciona: Artículo 4.- Las Empresas de Servicios de Alimentos, Bebidas y Diversiones
se clasicarán según las siguientes
categorías: • • • •
Restaurantes, con o sin Bares; Mesones; Discotecas y Clubes Nocturnos; Casinos y otras salas de juego.
Artículo 5.- De los Restaurantes: Comprenden aquellos establecimientos que
disponen de cocina y servicio ser vicio de comedor que ofrecen comidas y bebidas para ser consumidas por el público en el mismo establecimiento, mediante un precio. Se reputarán como Bares, aquellos establecimientos que disponen de barra y servicio de mesa que ofrecen al público, bebidas acompañadas o no, de bocadillos para ser consumidos en el mismo establecimiento, a cambio de un precio. Artículo 6.-
De los Mesones: Comprenden aquellas instalaciones que ofrecen un servicio de alimentos y bebidas, a cambio de una tarifa económica, que se caracterizan por una cocina tradicional o regional de calidad, y por una excelente armonización arquitectónica y decorativa interior y exterior con el entorno en que se encuentran. Artículo 7.-
De las Discotecas y Clubes Nocturnos: Corresponden a aquellos establecimientos que ofrecen presentaciones artísticas o culturales, además del servicio de bebidas y alimentación, mediante el pago de un precio. Artículo 8.- De los Casinos: Corresponde a los establecimientos en los que se practiquen juegos de mesa en
el que se utilice naipes, dados o ruletas y que admita apuestas del público, cuyo resultado dependa del azar, así como otros juegos, incluyendo las maquinas tragamonedas. Se regirán conforme la ley de la materia.

poseer materiales de calidad en todas sus instalaciones y mobiliario. Deben estar iluminados y ventilados en forma adecuada. Además, poseen servicio telefónico en la recepción, varios inodoros y urinarios en ambos baños, estar de espera y bar, cocina amplia y funcional. los requisitos anteriores, se le suman mesas con manteles y servilletas de telas que deben ser cambiadas al momento de la partida de cada comensal; una carta amplia y variada que comprenda varias especialidades. El área de estar y bar debe ser más amplia y las mesas del comedor tienen que estar separadas por al menos 50 centímetros entre sí. No puede faltar un almacén, bodega general, cámaras frías para conservar los alimentos. El personal, además, debe incluir un chef y un sub. Chef así como un maître bilingüe. Cinco tenedores:
además de cumplir con lo expuesto en la categoría anterior, estos restaurantes cuentan con cartas de licores y de vinos, cubiertos y vajillas de alta calidad, juegos de vasos y copas en vidrio tipo cristal. Al personal se le suma un capitán de mozos por comedor así como un barman y un subjefe de cocina fría y otro de cocina caliente. Aquí, además, la música (en vivo o ambiente) debe ser suave y la decoración armoniosa y de excelente calidad y gusto. Las luces son graduables y el aire acondicionado es una norma. En estos establecimientos, originarios de Estados Unidos, puede tomar rápidamente una comida ligera, motivo por el cual han tenido una gran aceptación en los países occidentales en esta agitada época donde el reloj controla todas las actividades humanas. En general, desde el área de AyB, hay que planicar, organizar y ejecutar y controlar los servicios de comidas, eventos o banquetes, desde la confección de recetas y menús, el control de stocks, la limpieza y mantenimiento de la maquinaria, enseres ensere s y vajillas, hasta la organización del salón y su mobiliario y el servicio al cliente. En concreto, su responsable, se ocupa de garantizar: • La preparación física del salón, bar, bar, limpieza y mantenimiento de todos los equipos de banquetes y salones para el evento, así como de las áreas relacionadas. • La distribución del trabajo en el equipo según las necesidades de atención en cada momento y la denición de relaciones jerárquicas (de decisión/subordinación) en el equipo. • El control y reposición de inventarios y stocks, a partir del ujo de clientes • La atención a los clientes o comensales, acorde con la imagen de empresa • La correcta facturación y cobro de los servicios • La recepción y acomodo del cliente de acuerdo a las reservas existentes. • La solución satisfactoria de quejas y reclamos • La capacitación del personal • El cumplimiento de las normas de seguridad e higiene en las labores diarias. • El cumplimiento de políticas o procedimientos del reglamento del local y las normas generales • Un trabajo serio, puntual y diligente. • El espíritu de trabajo en equipo y cooperación entre el personal y las demás áreas de la empresa. • Colaboración con la gerencia en la planicación, ejecución y control de presupuestos y planes de mercadeo de los servicios de restauración y la empresa en general. • La rentabilidad de los servicios ofrecidos Relación con otras áreas del negocio
Dependiendo del tipo de negocio, nuestra empresa tendrá relaciones más o menos complejas con otras áreas.
