INTRODUCTION MILK IS A COMPLETE DIET AS IT CONTAINS IN ITS PROTEINS, CARBOHYDERATES, MINERALS, VITAMINS AND WATER. CAESIN IS THE MAJOR PROTEIN CONSTITUENT PRESENT IN MILK AND IS MIXED PHOSPHO PROTEIN. CAESIN HAS ISOELECTRIC PH ABOUT 47 AND CAN BE EASILY SEPRATED AROUND THIS PH. IT READILYDISOLVES IN DILUTE ACID AND ALKALIS CAESIAN PRESENT IN MILK AS CALCIUM CAESINA IN FORM OF MISCELLES. THERE MISCELLES HAVE NEGATIVE CHANGE ON ADDING ACID TO THE MILK. THE NEGATIVE CHARGES ARE NEUTRALISED.
PROCEDURE
TAKE A CLEANDRY BAEKER PUT INTO 20 ML OF COWS MILK TAKE ANOTHER BEAKER AND PUT 20ML OF BUFFALOWS MILK AND IN THE THIRD DEAKER T AKE 20ML OF SHEEPS MILK. ADD 20ML OF SALTURATE DMAMONIUM SULPHATE SOLUTION SLOWLY IN ALL THE THREE BAEAKERS WITH STIRRING FAT ALPONG WITH CAESIN WILL PRECIPITATE OUT.
FILTER THE SOLUTION AND TREANSFER THE PRECIPITATES IN ANOTHER BEAKER. ADD 30ML OF WATER TO THE PRECIPITATES. ONLY CAESIN DISSOLVES IN WATER FORMING MILKY SOLUTION LEAVIANG FAT UNDISSOLVED.
HEAT THE MILK SOLUTION TO ABOUT 40C ADD 1% AETIC ACID DROP WISE, WHEN CAESIN GET PRECIPITATED.
FILTER THE PRECIPITATES WASH WITH WATER AND LET THE PRECIPITAES DRY.
WEIGHT THE DRY SOLID MASS IN PR EVIOUSLY WEIGHED WASH GLASS.

REQUIRMENTS : BEAKER (250ML), FILTER PAPER, GLASS ROD, WEIGHT BOX, FILTERATION FALSK,BSCHNERFUNNEL, WATER PUMP, TEST TUBES, PROCELIAN DISH, BURNER, DIFFERENT SAMPLES OF MILK, ONE PERCENT ACETATE SOLUTION SATURATED AMMONIUM SULPHATE SOLUTION.
ADD 20 ML OF SATURATED AMMONIUM SULPHATE SOLUTION
