2 ripe avocados,pitted,peeled,and sliced 2 carrots,peeled and cutinto matchsticks 1cup (1oz/30g )firmly packed mixed fresh herb sprigs such as mint,cilantro, and basil
Trim the stems from the mushrooms and discard or reserve for soup or stock. Slice the caps and set aside. In a large nonstick frying pan over medium-high heat, warm 1 teaspoons of the oil. Add the garlic and cook, stirring, until fragrant but not browned, about 30 seconds. Add the mushroom caps and sauté until they release their liquid, 3–4 minutes. Add the soy sauce and cook until the pan is dry, about 1 minute. Transfer to a bowl and set aside. Bring a pot of water to a boil over high heat. Add the noodles, stir to separate, and cook until tender, 3–5 minutes or according to the package directions. Drain in a colander and rinse under cold running water. Wipe the pot dry, return the noodles to the pot, and toss with the remaining teaspoon oil. Fill a large, shallow bowl with very hot tap water. Soak 1 rice paper wrapper at a time until just flexible, 10–15 seconds. Shake off any excess water and lay the wrapper flat on a work surface. Across the lower half of the wrapper, place rows of noodles, mushrooms, bell pepper, avocado, carrots, and herbs. Fold the edge closest to you over the filling, fold in the sides, then roll up tightly. Repeat to make the remaining rolls. Cut each roll in half on the diagonal and serve.

Place the homemade or purchased dough on a lightly floured work surface and press flat to release excess air. (Ifthedough hasrisenin therefrigerator,coverwitha kitchen towel and bring to room temperature before continuing.) Preheat the oven to 425°F (220°C). Grease a b aking sheet with olive oil. Press and stretch the dough into a rough oval about 10 by 20 inches (25 by 50 cm). Transfer to the prepared baking sheet and brush liberally with olive oil. Bake for 8 minutes. Meanwhile, make the honey-balsamic vinaigrette: In a bowl, whisk together the vinegar, honey, and a pin ch each of salt and pepper. Whisking constantly, slowly add the oil until emulsified. Set aside. Crumble the goat cheese over the flatbread, then arrange the figs evenly over the top. Continue to bake until the flatbread is golden, 6–8 minutes longer. Sprinkle the pomegranate seeds over the flatbread, then garnish with mint and oregano leaves. Drizzle the vinaigrette over the top, season to taste with salt and pepper, then finish with a drizzle of honey. Cut into pieces and serve.

Grass-Lined Steps The bold, colorful, strappy leaves of New Zealand flax come in shades bright shades of yellow, pink, red and bronze. They are excellent as con tainer plants but in warm areas, as, they're spectacular planted directly tly in the ground. The broad sword-shaped leaves are reminiscent of wall-paper when lined up in strips on a set of concrete stairs. Instead of bringing the outdoors in, this treatment brings the indoors out. The colorful exuberance of the plant in its natural state made a beautiful surfaceagainst the horizon tals of the concrete steps. Their ir neutral grey was an ideal background on which to affix vertical stripes of color. olor. Re-contextualizing the leaves as a flat surface highlights the striations in color and smooth texture of the leaves. After the blades are affixed ver tically on the step, they are trimmed to size making eachstep rise a work of art. If you don’t have access to flax, you can create this wall paper effect using different leaves ves and wide grasses.

here’s been plenty of ink spilled about this creature, the redneck. Some of it funny, much of it stupid, and just about all of i t wrong. We’re both routinely asked: “Aren’t you offended when someone calls you a redneck?” Lately, we’ve gotten: “Will you have to schedule an apology tour once the book is published?” The answer to both questions is “no.” We aren’t planning any apologies because we know what real rednecks are—male or female, knee-high or codger. Succinctly describing a redneck is admittedly difficult, but you know one when you meet one. He’s the old man who can dig a lifeless outboard motor out of a junk pile and have it running in a few hours. Or the guy who can sight in his .22 with two shots, then go shoot a limit of squirrels—each behind the shoulder because the brains are the second-best part after the saddle. She’s the gal who figured out how to hook the disc to the tractor because no way in this world was she going to ask for help. Rednecks believe that a sucker, freshly gigged out of a cold Ozark stream, is the tastiest fish there is, and that a titty is the best way to quantify the size of a bream. The redneck is not a southern guy or a mountain gal. She might not
have finished the sixth grade—but then again, she might have a doctorate. He’s the guy who can do things outdoors—hunting, fishing, fixing—that other people cannot. Partly, it’s because of experience, skill, and confidence. But it also has a lot to do with upbringing— redneck mamas raise few fools. Mostly, though, it’s because rednecks like to tinker and fuss and piddle with stuff that helps them enjoy life out in the woods and creeks and catfish lakes. That’s the thinking behind this book. We want to help folks drop a cricket down deep where the redbellies sulk, to get the perfect grip on a giant flathead catfish, or to put a .22 round up there high where that bushytail has flattened himself on the sycamore limb and is smirking at the squirrel dogs yapping up the trunk. And we want to celebrate all our redneck friends who already do those things. You’ll see thatthere’s a pretty simple structure to this book, because a redneck looks at life head-on. There’s hunting.
