Spices constitute an essential part of any dish and are used to add that special distinctive relish to Indian, Arabic and Mediterranean dishes for their aroma, fragrance and harmonized flavors’ Indian spices are world famous for their aroma, tangy taste and flavor. India meets almost 65% of the global demand for derivatives like spice oils and oleoresins. India leads in exporting spices and condiments to foreign countries. There are hundreds of marketers in India making good profits through spice market. The main objective of the project was to study the market potential of Ramdev food products in a particular area. After surveying the market, I concluded that spice is a potential market. MDH is the market leader in the national spice market. Ramdev Food products is a major exporter Ramdev and spice processor. The local market has huge potential for Ramdev food products. There are few competitors in local market like Everest, Mtr, Catch, Itc Aashirwad, Parrot. Retailers and end consumers agree with the unmatched quality of ramdev spices and we treat Ramdev Red chilli as the core product of ramdev spices. Price wars are the major limitations of the spice market. Customer demand in this segment arises with the awareness towards the product and then comes the taste and aroma of the product. Retailers focus on their profit margin. They push the high profit yielding products.
INTRODUCTION OF SPICES
A Brief History : The fame of Indian spices is older than the recorded history. The story of Indian Spices is more than 7000 years old. Centuries before Greece and Rome had been discovered, sailing ships were carrying Indian spices, perfumes and textiles to Mesopotamia, Arabia and Egypt. It was the lure of these that brought many seafarers to the shores of India.
Indian Spices : India is known the world over as `The Home of Spices`, thus Spices and condiments need no introduction. The climate of the country is ideal for the growth of almost all spices. Spices are an important group of agricultural goods, which are virtually indispensable in the culinary art. They also play a significant role in our national economy and also in the economies of several spice producing, exporting and importing countries. India accounts for about 45% of the global spice exports. In India, from the point of view of both domestic consumption and export, spices are important commercial crops.
According to the International Organization for Standardization [ISO], there are about 109 spices and India produces as many as 75 in its various agro climatic regions. The term ` spices and condiments` applies to `natural plant or vegetable products or mixtures in whole or ground form, which are used for imparting flavor, aroma and piquancy to the food items`. Spices are also being used within the country for flavouring foods and in medicines, pharmaceutical, perfumery, cosmetics and several other industries.
Spices may comprise different plant components or parts such as Floral parts [cloves, saffron etc.], or Fruits [cardamom, chilies etc.], or Berries [allspice, black pepper, juniper etc.], or Seeds
[aniseed, caraway, celery, coriander], or Rhizomes [ginger, turmeric etc.], or Roots [angelica, horse-radish, lovage etc.], or Leaves [bay leaves, mints, marjoram, tejpat etc.], or Kernel [nutmeg etc.], or Aril [mace], or Bark [cinnamon, cassia etc.], or Bulbs [garlic, onion etc.], or other part of spice plants.
There is a popular belief that spicy foods are bad for health. This belief is not only far from the truth but also that; spices in fact have medicinal properties and are good for health. Spices are well known as appetizers and digestives and are considered essential in the culinary art all over the world.. Some of them have anti-oxidant properties, while others have preservative properties and are used in some foods like pickles and chutneys, etc. Some spices also possess strong antimicrobial and antibiotic activities. Many of them possess medicinal properties and have a profound effect on human health, since they affect many functional; processes. For example, spices intensify salivary flow and the secretion of amylase, neuraminic acid and hexosamines. They cleanse the oral cavity from food adhesion and bacteria; they may help to check infection, and to protect the mucous membrane against thermic, mechanical and chemical irritation. Spices increase the secretion of saliva rich in ptyalin, which facilitates starch digestion in the stomach, rendering the meals, which are rich in carbohydrates, more digestible.
Spices possibly activate the adrenal-cortical function and fortify resistance and physical capacity. Stroke volume, blood pressure and stroke frequency can be markedly diminished or augmented by means of spices. Spices inhibit thrombus formation and accelerate thrombolysis. During World War I, and a few years after, India was principal supplier of essential oils like thymol, produced both with the help of traditional distillation methods as well as modern steam distillation methods. But the market was lost forever due to inven tion of synthetic essential oils.
