INTRODUCCION La experiencia en el campo laboral dentro de las distintas carreras profesionales, constituye uno de los principales pilares para el desarrollo de un verdadero profesional. Es sabido que tener contacto con lo que puede ser tu t u campo o ambiente de trabajo permite contrastar de forma satisfactoria los conocimientos adquiridos en clase, pero ello también depende mucho de la actitud que se muestra frente a la solución de problemas y el tipo de ingenio para resolverlos, rasgo característico de un ingeniero. En el presente presente informe se mostrará de forma detallada los datos característicos característicos de la empresa donde se han desarrollado las prácticas pre-profesionales pr e-profesionales;; los datos generales de la persona que me dirigió dentro de la planta agroindustrial, se describirá el trabajo que se desempeñó como practicante y una breve descripción de los procesos llevados a cabo dentro de la empresa. En la segunda parte del informe se describirán las problemáticas identificadas gracias a la observación y análisis durante mi desempeño como practicante; asimismo se plantearan las alternativas de solución que a mi criterio se han creído convenientes convenientes para la búsqueda de un mejor desarrollo de la empresa. Producción maneja a diario los llamados reportes de producción, los requerimientos de insumos, materiales y mano de obra; los parámetros durante las operaciones de procesos dentro de la empresa, los controles de calidad, los niveles de merma, el número de cajas exportables y no exportables, los rendimientos. etc. Las actividades antes mencionadas están a cargo de jefes, profesionales contratados, practicantes y obreros, que realizan su labor bajo la visión y política de la empresa. Producción cumple funciones de supervisión en planta durante el desarrollo de las operaciones de proceso y en oficina para el registro total de los rendimientos, reportes, variaciones y niveles de producción.

Descripción de los procesos de la empresa En Agroyex Exportaciones del Perú S.A.C cuenta con tres campos relacionadas directamente con el el campo de la ingeniería ingeniería agroindustrial e industrias alimentarias y que forman parte de la producción que realiza la empresa: Planta Frescos, Planta Congelados (IQF) y el aseguramiento y control de calidad. 1.4.1. Planta Frescos La variedad de exportación en la planta agroindustrial es Kent , este según Merino & Najas (2015), se originó de la variedad “Brooks”, la que a su vez provino de la variedad “Sandersha”.Es una f ruta grande que llega a 13
cm o más de longitud, con un peso promedio de 680 gramos. Tiene una forma ovoide, más llena y redondeada con color base amarillenta y sobre color rojo obscuro, numerosas lenticelas pequeñas y amarillas, además, tiene pulpa jugosa, sin fibra, rica en dulce y calidad de muy buena a excelente.
La planta frescos, cumple la función de empacar mango fresco para exportación, teniendo como mercados de destino Europa y Estados Unidos. El área de producción de mango frescos se basa en una serie de operaciones como recepción de fruta, abastecimiento
